The day

Food at Baardseng Gård is tied directly to the soil, the seasons, and generations of preserved farmstead traditions. In our farmhouse kitchen, the day begins early: natural sourdough loaves slide into the birch-fired stone oven, heritage root vegetables roast slowly with fresh herbs, and cultured cream churns into sweet golden butter.

Feast by the open fire with fresh organic produce sourced directly from fields and growers neighboring Baardseng. Long-fermented bread is rising slowly to the sound of the birch-fired stove.

Our seasonal table evolves monthly. Summer showcases fresh garden greens, wild berries, and new potatoes; autumn brings harvest roasts, forest mushrooms, and orchard cider; winter is celebrated with rich slow-cooked holiday feasts.
